Bread - one of the most important things and ingredients these days and means a lot. An inspiration for you to make this easy bread salad with ciabatta chunks, mozzarella, any vegggies you have in fridge, capers and drizzled with a simple lemon-basil vinaigrette, olive oil.

1.Slice, dice or chop any vegetables you have at home or you like.
2.Toast slices chunks of bread, drizzle with olive oil, season and sprinkle with dried herbes.
3.Prepare a lemon dressing from olive oil, lemon juice (and peel), salt, black pepper and a basil pesto or freshly chopped basil.
4.Drizzle the vegetables with extra olive oil and prepared dressing
5.Garnish with pieces of mozzarella or parmesan leftovers (if you have any at home).
